Will these fit a 2003 rubicon with factory brackets?
No, these seats require these brackets for your TJ.

What is the thickness of the bottom cushion and the thickness of the back?
Those seats have a seat back thickness of 5.5-6”. They will break in over time but that is how thick they are when they come out of the box.
Seat bottoms are very close to that same 5.5-6” thickness.
